The knives look like those used for sheep, goats or cattle,not birds. Knives used for chickens are smaller
It would appear that checking a knife in an office is not as reliable as checking it before slaughter on location as things happen between the office and slaughter floor

There is a long established minhag for shochtim to present their chalofim to the town’s Rov in the aseres ymai tshuva
